Ancient History of Wood-Pressed Oil

Our journey begins in the Indus Valley Civilization, a thriving society that flourished in present-day Pakistan and northwestern India around 3300 BCE. Excavations at Harappan sites have unearthed remnants of oil-pressing machines alongside charred sesame seeds, a testament to their mastery of wood-pressing technology over 5,000 years ago.

These ancient oil presses, often referred to as “ghanis,” “chekku,” or “kolhu,” were marvels of engineering for their time. They employed a simple yet ingenious design, utilizing a mortar and pestle-like mechanism. Oilseeds were crushed between heavy stones or wooden beams, releasing their precious oil through sheer mechanical pressure.

The beauty of wood-pressing lies in its preservation of natural goodness. Unlike modern methods that rely on high heat and chemical solvents, wood-pressing keeps temperatures below 50 degrees Celsius.           Unlike wood-pressed oils, which have been around for centuries, refined oils are a product of modern technology. The refining process, developed in the 19th century, allows us to extract a large amount of oil from various sources like seeds and vegetables, while also improving its stability and versatility.

लाकडी घाणी तेलाचा इतिहास

लाकडी घाणा तेल आपल्या शुद्धतेसाठी आणि आरोग्याच्या फायद्यांसाठी बहुमुल्य असून या तेलाचा भारतीय संस्कृतीत हजारो वर्षांचा इतिहास आहे. पुरातत्वीय पुराव्यांवरून असे दिसून येते की, लाकडी घाण्याद्वारे तेल काढण्याची ही सोपी परंतु प्रभावी पद्धत असून हा केवळ आधुनिक शोध नाही, तर या पद्धतींच्या खुणा इतिहासातही दिसून येतात.
लाकडी घाणी तेलाचे पुरावे सर्वप्रथम  सिंधू संस्कृतीत दिसून आले आहेत. सध्याच्या पाकिस्तान आणि वायव्य भारतात सुमारे 5 हजार वर्षांपूर्वी भरभराटीला आलेल्या हडप्पा (जो सिंधू संस्कृतीचा भाग होता) ठिकाणांवरील उत्खननात जळलेल्या तीळांच्या बरोबर तेल काढणाऱ्या यंत्रांचे अवशेष सापडले आहेत.
त्याचबरोबर सुमारे 2500 वर्षापूर्वीच्या संस्कृत साहित्यात घाणी तेलाचा उल्लेख आढळून आलेला आहे. तसेच काही भाषिय पुराव्यांद्वारे असे दिसून येते ख्रिस्तापूर्वी 1500 च्या दरम्यान देखील दाब तंत्राद्वारे विविध तेलबिया तसेच फळांचा रस काढण्याची यंत्र विकसित करण्यात आली होती. या यंत्रांना “घानी,” “चेक्कू,” किंवा “कोल्हू” असे संबोधले जात असे.
भारताशी सांस्कृतिक संबंध असलेल्या श्रीलंका, म्यानमार व अफगाणिस्तान या देशातही तेल घाणी वापराचे पुरावे आढळून आलेले आहेत.
महाराष्ट्राची संस्कृती कृषी प्रधान असून आपल्या या संस्कृतीत पूर्वी कामावर आधारीत बारा बलुतेदार पद्धती प्रत्येक गावात प्रचलित होती. या पद्धतीत शेतकरी हा केंद्रस्थानी असून त्याच्या तसेच सर्व गावाच्या इतर गरजा पूर्ण करण्यासाठी बारा बलुतेदार असतात. या बारा बलुतेदारांपैकी एक असलेला तेली समाज लाकडी घाणा व बैलाच्या सहाय्याने तेल काढण्याचे काम करीत असे.
20 व्या शतकातील भारतातील लाकडी घाणा तेलाचा इतिहास
विसाव्या शतकाच्या सुरवातीला भारतात सुमारे 5 लाख लाकडी तेलाची घाण्या अस्तित्वात होती. या घाण्यातून भारतातील 97 टक्के तेलाची गरज भागवण्यात येत असे. औद्योगिकीकरण व यांत्रिकीकरणामुळे 1930 पर्यंत तेल उद्योगावर परिणाम होऊन तेल काढण्यासाठी लाकडी घाण्याचा वापर 40 टक्क्यांपर्यंत कमी झाला. हाच आकडा 1940 पर्यंत 28 टक्क्यांपर्यंत घसरला.
सन 1930 मध्ये महात्मा गांधी यांनी ग्रामोद्योगांना उज्ज्वलतेसाठी विशेष प्रयत्न केलेले आढळून येतात. त्यांच्या संकल्पनेचा परिणाम म्हणजे खादी व ग्रामोद्योग आयोगाची स्थापना. या आयोगामार्फत लाकडी घाण्याच्या प्रगतीसाठी विशेष प्रयत्न केले जातात.
